The S.B.S Fiji 2021 was distilled in the pot still at the South Pacific Distillery in 2021, finished in a single Pedro Ximénez Sherry cask and bottled at a punchy 55.7% in 2022. Young and vibrant, it’s a coming together of the Pacific island’s tropical exoticism and the fruitcake-like richness of one of the world’s greatest fortified wines. Christmas cake, Medjool date, liquorice, tobacco, cardamom bun and cherry chocolate liqueur flavours collide with lots of banana, pineapple, fresh sugarcane, passionfruit, coconut, ginger, mint and the tang of pink grapefruit and gooseberry. Despite its youth, this is super smooth with masses of complexity. All that tropical fruit makes this experimental rum a great sundowner for the summer months. 1423 was formed when a group of friends went to a whisky fair in Denmark, but unexpectedly ended up falling in love with a rum. So infatuated with this spirit, they bought and bottled their own cask of it and the rest, as they say, is history.
