Although these Cistercian Trappist monks have been brewing for over 170 years, Chimay Blue was first created as a Christmas beer in 1954 and has quickly become one of the most famous and loved brews in the Chimay range. Dark, warming and it ages wonderfully, improving and gaining complexity with time. As a result, there’s no rush to gobble this particular beer down, which is why we recommend stocking up for the winter months and letting the bottles develop.
